So it’s time to go back to one of our favorite vacation spots for the blog. As much as we love Maine and the beautiful scenery, we love their cuisine. One of our favorites is the Lobster Roll
Sweet delicate lobster lightly dressed with mayo, crisp veggies and a touch of Old Bay on a toasted, buttered hot dog roll
I would be remiss if I didn’t include at least one picture of a lighthouse!

So let’s get cooking
We came home with a bunch of steamed whole lobsters so we took three for this recipe
Once removed from the shell, they yielded about 1 pound of lobster meat that we cut up into large chunks
Now depending on where you go, lobster rolls can vary
Some have a mayonnaise base… some are just tossed in browned butter
We are taking a more traditional route with a bit of a Simply Sundays’ flair
We used 1 celery stalk, 2 scallions, 2 tablespoons of fresh parsley, 1/4 cup of mayonnaise and 1 teaspoon of Old Bay seasoning
We don’t want to overpower the delicious lobster meat with too much mayo, so be conservative and taste as you go
Give the celery, scallions and parsley a nice chop
Add them to the lobster
Next up, add in the mayo and Old Bay
Give everybody a gentle mix and place into the refrigerator until your ready to serve (this will allow the flavors to meld)
Now this next step is crucial and separates the good lobster rolls from the okay lobster rolls
It’s the bun!
The hot dog roll has to be a split top and as far as I’m concerned, it needs to be toasted with some butter
So spread some butter on the sides of the roll, get them into a hot pan
And toast them up!
Now fill them with that delicious lobster salad and serve!

Simply Sundays! ~ Lobster Rolls
Ingredients
1 pound of lobster meat
1/4 cup of mayonnaise
1 celery stalk
2 scallions
2 tablespoons of fresh parsley
1 teaspoon of Old Bay Seasoning
4 split top hot dog rolls
2 tablespoons of butter
Directions
If using whole lobsters, remove the meat from the claws and tail and give it a rough chop. Place into a large mixing bowl
Chop the celery, scallions and parsley. Add them to the lobster along with the mayonnaise and Old Bay. Give everybody a gentle mix and place into the refrigerator until your ready to serve
Butter split top hot dog rolls and toast them in a hot pan. Fill with the lobster salad and serve
