Caipririnhas (pronounced kye-pur-een-yah) are a popular refreshing cocktail in Brazil
This version isn’t 100% Brazilian, but it will most definitely get you in the spirit!
Cachaca liquor isn’t readily available in any liquor stores near us, so we substituted with light rum. It’s OK… our friends in Brazil won’t judge us
For 2 cocktails, I’m using 4 ounces of light rum, 2 tablespoons of freshly diced pineapple, 2 tablespoons of superfine sugar, 1/2 lime and a bunch of fresh mint
Divide superfine sugar, pineapple and mint between 2 glasses
Muddle (which just means to mash) until the ingredients are combined well
I like my drinks icy cold, so I’ve added the rum and lime juice to a shaker filled with crushed ice. Shake it baby!!
Pour over the muddled mint-pineapple mixture and give a quick stir to combine
Fill the rest of the glass with crushed ice and serve with a garnish fresh pineapple and a mint sprig

Ingredients
4 ounces of light rum
2 tablespoons of freshly diced pineapple
2 tablespoons of superfine sugar
1/2 lime
A bunch of fresh mint
Directions
Divide superfine sugar, pineapple and mint between 2 highball glasses and muddle the ingredients until they are well combined
Fill the rest of the glass with crushed ice and serve with a garnish fresh pineapple and a mint sprig
