Pico de Gallo, or Salsa Fresca, is quick and easy to chop up & SO deliciously fresh!
I’m using one pound of garden tomatoes, the juice of a fresh lime, one jalapeno, a small red onion, a bunch of fresh cilantro and kosher salt & black pepper for seasoning
Chop all of the veggies into a small dice and add to a mixing bowl
You can either leave the seeds in the jalapeno or remove them depending upon how hot you like your salsa
Add the juice of the lime and kosher salt and black pepper to taste
Mix well and let the flavors meld in the fridge for about an hour
Serve with tortilla chips or with Simply Sunday’s Baja Fish Tacos!
