Herbed Fingerling Potatoes

Ever see those cute little bags of fingerling potatoes in the grocery store and think… Hmmm.. what would I do with those?

Roast ’em up with some rosemary, oregano and garlic, that’s what!

I’m using 2 pounds of purple, red and white fingerlings

Melt 3 tablespoons of butter and assemble a large sprig of fresh rosemary, a few sprigs of fresh oregano, 3 garlic cloves and kosher salt and black pepper

Finely chop the herbs and garlic.  Add the butter, herbs, garlic and a 1/2 teaspoon of kosher salt and black pepper to a large mixing bowl.  Mix it up!

Have your grill preheated to 400 degrees F and place the potatoes on a grill pan over indirect heat

Indirect heat meaning the burners are on/off/on, so it is acting more like an oven

You can also grill the fingerling potatoes right on the grill grates if you’d like, I just find it easier to corral them on the grill pan

Let the potatoes cook, flipping them occasionally, for 30-35 minutes until they can be easily pierced by a knife
