I happen to think sparkling wine is pretty perfect on it’s own. The thought of this chilled, bubbly and crisp drink just makes me smile 🙂
What makes this wonderful beverage a Bellini, is the addition of fresh, pureed fruit
Start with a bottle of your favorite Sparkling Wine, Champagne or Prosecco
To actually be called “Champagne”, the sparkling wine grapes must be grown and produced from the Champagne region of France and to be called Prosecco, the sparkling wine must originate from a region in Northern Italy. A little wine trivia for you
But I don’t like to split hairs… you can use whatever favorite sparkling variety you prefer to make these delicious Bellinis
I’m using a heaping 1/2 cup of fresh raspberries and a tablespoon of superfine sugar
Combine in a mini blender or food processor
and give it a whirl!
Push the puree through a fine strainer to remove the seeds
Chill the raspberry puree until you are ready to assemble the bellinis
So good, I could eat it just like this! But I’ll wait…
The key to a delicious bellini is to chill both the wine and the glasses
I’ve put the glasses in the freezer right up until the last minute
Spoon about a tablespoon of the raspberry puree into each glass
Top with the chilled sparkling wine and enjoy!

Ingredients
One 750 ml bottle of Champagne, Prosecco or Sparkling Wine
1/2 cup of fresh raspberries
1 tablespoon of superfine sugar
Directions
Put the champagne glasses in the freezer
Blend 1/2 cup of fresh raspberries and a tablespoon of superfine sugar in a mini blender or food processor; push the puree through a fine strainer to remove the seeds
Chill the raspberry puree until you are ready to assemble
Remove glasses from freezer, spoon about a tablespoon of the raspberry puree into each glass; top with the chilled sparkling wine and enjoy!
