Panettone French Toast

Panettone is a slightly sweet Italian cake that you see around the holidays, typically containing raisins and candied orange peels

It’s one of our favorite cakes to eat as is, or… made into this delightful french toast

But first, there is a funny story behind how we first tried this treat

My wife and I had never had it before.  We went out on a date and were sitting at a bar eating sushi

 The two Japanese sushi chefs were eating Panettone and asked if we would like some

We said no at first.  They insisted we try it because it was so wonderful, so of course we did

 Go figure… it took two Japanese men to get two Italians to try this delicious and traditional Italian cake!

Talk about two cultures working together!

Now this cake is fantastic on it’s own, but we decided to take it one step further and make french toast out of it

What exactly is panettone?

The word panettone is derived from the Italian word “panetto” which means a small loaf cake

Panettone is a somewhere between a bread and a cake in taste.  It has a slight sweetness and is associated with Christmas in Italy. The dough for panettone is rich and contains a lot of butter and eggs. The addition of the fat to the dough gives it a very fine, tender texture

Cut 2 thick slices out of the Panettone

Next we will need 4 eggs, 1/4 cup of milk, zest from 1 orange, 1 tablespoon of vanilla and some fresh grated nutmeg

Crack the eggs into a dish

Add in the rest of the ingredients and whisk together

Melt 2 tablespoons of butter in a non stick pan over medium heat

Place your Panettone slices into the egg wash and let sit for 30-40 seconds

Panettone is a soft cake to start with so over soaking it could cause it to break down

Flip and soak for another 30 seconds

Using a slotted spatula, carefully remove the Panettone from the egg wash and place into the heated pan

Cook for 2-3 minutes per side then remove to a rack

Allow to cool slightly

Sprinkle with a little powdered sugar

We served this with bacon and some syrup on the side!

Ingredients

2 slices of Panettone cake

4 eggs

1/4 cup of milk

zest from 1 orange

1 tablespoon of vanilla

fresh grated nutmeg

2 tablespoons of butter

powder sugar for dusting (optional)

Directions

Cut 2 thick slices out of the Panettone

In a dish combine 4 eggs, 1/4 cup of milk, zest from 1 orange, 1 tablespoon of vanilla and some fresh grated nutmeg.  Whisk them together

Melt 2 tablespoons of butter in a non stick pan over medium heat.  Place your Panettone slices into the egg wash and let sit for 30-40 seconds.  Flip and soak for another 30 seconds
