I’ll admit it, I wasn’t the biggest chick pea fan. But when I saw oven roasted chick peas on a salad bar, I thought I’d give them a try
Whoa! Oven roasting transforms these little beans into a nutty, healthy snack!
Drain and rinse two 15.5 ounce cans of chick peas (garbanzo beans)
Pat with a paper towel and let dry on a rack
Removing the moisture allows the chick peas to crisp up in the oven which is what makes them SO tasty!
I had to add in this photo… our dog Pippin LOVES chick peas straight from the can. I’m sure she was thinking that this was torture not to have a couple in her bowl
Yeah, she’s spoiled, so of course I gave in
Put the chick peas in a large bowl, drizzle with olive oil and sprinkle with a pinch each of kosher salt and black pepper
Spread out on a sheet pan and roast at 350 degrees
After about 15 minutes, stir up the chick peas so they cook evenly
Roast for about 35 to 45 minutes, until the chick peas are crisp
I like to mix in a quarter of a teaspoon of cayenne pepper to spice up these tasty beans
A healthy, nutty snack with a hint of spice!

Ingredients

1/4 cup of olive oil
sprinkle of kosher salt and black pepper
quarter of a teaspoon of cayenne pepper

The last time I made roasted chickpeas, the peas didn’t crisp. Maybe it was because I mixed them in a sundried tomato paste.
I am going to try your recipe!
I think the key is to make sure they’re dry. I rinse and drain them, then dry completely on a paper towel.
