Sweet & Sour Beef

Pressure cooked fork tender beef with a sweet and tangy sauce equals a fast and totally delicious dinner!

So there I stood looking through our fridge and attempting to figure out a solid meal for the family with no clue as to what to make for dinner

We have all been there.  We had limited items to choose from and my creativity was running low

You would think being a food blogger would help but when you constantly think of food, you sometimes run out of ideas

So I started to think in steps

First step is easy, slow cooker maybe.  Perhaps even the pressure cooker, now we are talking!

Next is what would we get the the most dinner out of ?

And then I found that we happened to have a 3 pound family pack of beef stew meat

Let’s start there

Remove any excess fat and cut any larger pieces into smaller cubes to try and keep things even for cooking and place them into a large bowl

Toss the meat with some kosher salt and ground black pepper

We are using our Instant Pot pressure cooker for this recipe which has a saute function

Add 2 tablespoons of olive oil to the Instant Pot and hit the saute button

Add the meat in batches and sear on all sides

Once the meat is browned remove and set aside

Next we will need 1 large onion, 6 ounces of baby bella mushrooms and 4 garlic cloves

Peel and dice the onion

Rub any dirt from the mushrooms with a paper towel and slice them

Chop the garlic

Add the vegetables into the Instant Pot

Saute 6-8 minutes

Add the meat to the pot along with any juices that have collected

Stir to combine

Next we will need 24 ounces of chili sauce, 1/4 cup of brown sugar, 2 tablespoons of Worcestershire Sauce and 2 tablespoons of Gravy Master

Note:  If you don’t have chili sauce just substitute ketchup

Add all of these ingredients to a bowl and whisk together

Pour into the Instant Pot

Mix to combine

Cover and cook on high pressure for 30 minutes

Allow the pot to release the pressure naturally

The meat should be very very tender

We served this over egg noodles with a sprinkle of fresh parsley!

Ingredients

3 pounds of beef stew meat

2 tablespoons of olive oil

Kosher salt and ground black pepper

1 large onion

6 ounces of baby bella mushrooms

4 garlic cloves

24 ounces of chili sauce

1/4 cup of brown sugar

2 tablespoons of Worcestershire Sauce

2 tablespoons of Gravy Master

fresh parsley for sprinkling

cooked egg noodles (optional)

Directions

Remove any excess fat from the stew meat and cut any larger pieces into smaller cubes to try and keep things even for cooking.  Place them into a large bowl and toss with some kosher salt and ground black pepper

Add 2 tablespoons of olive oil to the Instant Pot and hit the saute button.  Add the meat in batches and sear on all sides.  Once the meat is browned remove and set aside

Peel and dice 1 large onion.  Rub any dirt from 6 ounces of baby bella mushrooms with a paper towel and slice them.  Chop 4 garlic cloves.  Add the vegetables into the Instant Pot and saute 6-8 minutes.  Add the meat to the pot along with any juices that have collected and stir to combine

In a large bowl whisk together 24 ounces of chili sauce, 1/4 cup of brown sugar, 2 tablespoons of Worcestershire Sauce and 2 tablespoons of Gravy Master.  Pour into the Instant Pot and mix to combine

Cover and cook on high pressure for 40-45 minutes.  Allow the pot to release the pressure naturally.  Serve over egg noodles sprinkled with fresh parsley
