Slow Cooker Mashed Potatoes

If you’re like me, your slow cooker is one of your most prized kitchen tools

I love being able to put ingredients into a pot and walk away

I could use this time to check social media, paint my nails, read a book…

Ok, none of those things realistically happen, but it sure is a time saver

These slow cooker potatoes are not only simple, they are flavorful because they cook in some chicken stock

I’m using 3 pounds of yukon gold potatoes because they can stand up to slow cooking

Peel and cube the potatoes

Add the potatoes to the slow cooker along with 1 cup of chicken stock and 1/4 cup of butter

I’m using the slow cooker feature on my Instant Pot and setting it on high for 3 hours

The potatoes are done when they can be easily pierced

Use a potato masher to get to the desired consistency

Add in 1/2 cup of sour cream, a pinch of kosher salt and black pepper

Taste, re-season if necessary and serve!

Ingredients

3 pounds of yukon gold potatoes

1 cup of chicken stock

1/4 cup of butter

1/2 cup of sour cream

kosher salt

black pepper

Directions

Peel and cube the potatoes

Add the potatoes to a slow cooker along with 1 cup of chicken stock and 1/4 cup of butter; set on high for 3 hours

The potatoes are done when they can be easily pierced; use a potato masher to get to the desired consistency

Add in 1/2 cup of sour cream, a pinch of kosher salt and black pepper; taste & re-season if necessary
