A cheesy filling of ground beef, jalapenos and onions topped with enchilada sauce and even more cheese!
Mexican style food is very versatile and flavorful
It always seems to be a crowd pleaser, whether your talking tacos, enchiladas, chimichangas or one of our personal favorites burritos
The best part is that with simple ingredients you will enjoy delicious Mexican food right out of the comfort of your own home!
Here is our take on a delicious beef burrito!
We are starting with 2 pounds of ground beef

Heat 2 tablespoons of olive oil over medium high heat and add in the ground beef
Sprinkle with kosher salt and ground black pepper

Cook 8-10 minutes, breaking the meat up to into smaller pieces until all the meat has been nicely browned

Using a slotted spoon, remove the meat and set aside
Drain off the excess fat from the pan
Next we will need 1 onion, 2 garlic cloves and 2 tablespoons of jalapenos
I’m using pickled jalapenos because I happen to have them, you can certainly use fresh or omit them all together

Dice the jalapeno and add them into the pan
Cooking them down will remove some of the tang from being pickled and give them a warmer flavor
Cook these 2-4 minutes

Remove the peppers from the pan and set aside
Peel and chop the onions and garlic and add them to the pan
Sprinkle with some kosher salt and ground black pepper

Cook 8-10 minutes or until the onions are tender and lightly browned

Add the meat back in and stir to combine

Next we will need 1 cup of red enchilada sauce, 2 tablespoons of taco seasoning and 1 tablespoon of Gravy Master

Add in the enchilada sauce and Gravy Master
Stir to combine

Add in some of the taco seasoning along with some of the jalapenos
Taste and add in more as needed

Mix to combine and bring to a simmer
Allow the flavors to meld for 8-10 minutes

Remove from the heat and allow to cool slightly
Preheat your oven to 375 F
Add 1 cup of shredded cheddar cheese to the mixture and fold in to combine

Were making enough for 2 baking dishes but for demonstration purposes, we are only showing one
Add around 3/4 cup of red enchilada sauce to the bottom of a 9 x 13 inch baking dish

We are going to use burrito style flour tortilla shells
To make them more pliable and easier to work with we are going to heat 1-2 inches of water in a pan
Dip the tortilla in the water

Get the tortilla onto a work surface
Use a 1/2 cup measure to scoop the meat and place it in the center tortilla

Fold the outer edges in

Fold the edge closest to you in towards the top and then give it a roll until you have a nice burrito
If any of the filling starts to leak out just push back in as you roll with the tips of your fingers



Place into the baking dish and repeat
We were able to get 8 in one dish

Top each one with a bit of the enchilada sauce

Spread the sauce around

Top with another 6 ounces of shredded cheddar cheese

Spray a sheet of parchment paper with cooking oil and place oil side down on top of the burritos

Next cover with aluminum foil

Repeat with any remaining ingredients in another baking dish
Bake for 30 minutes
At the 30 minute mark uncover and bake for another 10 minutes

After the 10 minutes are up broil them for 3-4 minutes or until brown and bubbly
Make sure and keep an eye on them while they broil
Allow them to sit for a few minutes before serving

Serve with your favorite toppings!

2 tablespoons of Taco Seasoning
1 tablespoon of Gravy Master
2 cups of shredded cheddar cheese, divided (one cup for the filling, one cup for the topping)

Next add in 2 tablespoons of chopped pickled jalapenos. Cook for 2- 4 minutes. Remove the peppers from the pan and set aside. Peel and chop 1 onion and 2 garlic cloves. Add them to the pan. Sprinkle with some kosher salt and ground black pepper

Add in 1 tablespoon of Taco Seasoning (and more to taste) along with the reserved jalapenos. Bring to a simmer and cook 8-10 minutes to allow the flavors to meld.
