I’m a huge fan of meat loaf
I mean it is so versatile that you could almost eat it everyday and never have two that are the same
Once you try this version I know your going to love it
Not only are we making it a personal sized meat loaf, we are going to stuff it with cheese and grill it
We are going to use 3 pounds of ground turkey
Feel free to use ground beef or pork or even a mix
Lets start with 5 slices of bacon and 1 onion
Peel and chop the onion and chop the bacon
Place the onion and bacon in a pan over medium heat
Cook 6-8 minutes stirring occasionally until the bacon has rendered down and the onions start to caramelize
Using a slotted spoon remove to a bowl and set aside
Allow to cool
Next we will need 3 eggs whisked, 1 cup of bread crumb (plus more if needed), 1/4 cup of ketchup, 2 tablespoons of dijon mustard, 1 tablespoon of Worcestershire Sauce and 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
Add all the ingredients to the ground meat
Add in the cooked onion and bacon
Using your hands gently mix together until well combined
Now for the best part
We are going to add cheese
We used mozzarella because it is going to melt nicely and become gooey and delicious
Cut an 8 ounce block into 1/2 inch slices
I’m using a 1 cup measure for each meatloaf
Dump the meat mixture into one hand
Flatten the meat mixture out into and oval pattie
Push a slice of cheese into the pattie lengthwise and fold the sides up around the cheese
Ensure that all the cheese is covered by meat
Line a sheet pan with parchment paper that has been sprayed with cooking oil
Place the formed loaves (this yielded 8) on the parchment paper and spray the tops with some more cooking oil
Sprinkle the loaves with kosher salt and ground black pepper
Cover and refrigerate for at least 30 minutes
This will help them stay together on the grill
You can also do this a day ahead
While the meat loaves are chilling out lets make a glaze
We will need 1 cup of ketchup, 2 tablespoons of brown sugar, 1 tablespoon of dijon mustard, 1 tablespoon of Worcestershire Sauce and 1/2 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
Place all the ingredients in a bowl
Whisk until combined
Preheat your grill to around 350 F
Place the loaves over indirect heat and cook 10 minutes
After the first 10 minutes are up, turn (not flip) your loaves to produce those nice hash marks and cook another 6 minutes
Next, flip them
Apply the glaze and cook another 6-8 minutes or until cooked through
Allow them to rest a few minutes before serving and watch them disappear!

Ingredients

2 tablespoons of brown sugar
1 tablespoon of dijon mustard
1 tablespoon of Worcestershire Sauce
1/2 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
Directions
Place the ground turkey in a large bowl. Peel and chop 1 onion and chop 5 slices of bacon. Add the bacon and onions to a pan over medium heat.
