Seared Pork chops slow cooked with a duck sauce glaze until fork tender
This could quite possibly be the easiest slow cooker pork we have ever made
I’m inspired by this dinner from my childhood
You know those dinners from when you were a kid that you miss?
My Mom would oven bake pork chops, add Chinese Duck Sauce and bake and bake and bake
This was such a simple, basic dish but the sauce became so rich and the pork so delicious, that I never forgot it
We decided to make this even easier by utilizing the Instant Pot as a slow cooker
A little bit of work up front and a big payout at the end!
That’s right, super easy on a baseball-soccer-homework kind of night
We have 6 boneless pork chops to start with
We are going to sprinkle these with some kosher salt and ground black pepper
Since we are using the Instant Pot we have the option of browning the pork with the saute function
If using a traditional slow cooker I would recommend searing the pork in a pan first but you can skip this step if you choose
We heated 2 tablespoons of olive oil in the pot and added in half the chops
Depending on the size of the the pot sear in batches
Add a bit of salt and pepper to the other side as they sear
Sear for 2-4 minutes until they actually release from the pan easily and sear the other side
Remove and add in the other chops and repeat the sear
Set the pork aside
Once all the chops are seared layer them back in the Instant Pot
Sprinkle them with some garlic powder and onion powder
Next we will need about 2 1/2 cups of duck sauce
Pour this in and spread evenly over the chops
Slow cook on high for 3-4 hours or on low 6-8 hours
Let’s take a look at this delicious pork!
Remove the chops gently (they are fork tender) and set aside
Sprinkle about a tablespoon of cornstarch onto the sauce in the pot give it a whisk and hit the saute button
The sauce will start to tighten up and thicken
We like to dip the chops back in the sauce to coat them and serve with some white rice and fresh chopped scallions!

Ingredients
6 boneless pork chops
2 tablespoons of olive oil
kosher salt
ground black pepper
garlic powder
onion powder
2 1/2 cups of duck sauce
1 tablespoon of cornstarch
chopped fresh scallions
Directions
Sprinkle pork chops with kosher salt and ground black pepper. Set the instant pot to saute and add 2 tablespoons of olive oil. Once the oil is lightly smoking sear the pork in batches around 2-3 minutes per side. Set aside and repeat until all the pork is seared
If using a regular slow cooker do the searing step ahead of time in a a pan
Layer the pork back in the Instant Pot and sprinkle with garlic powder and onion powder. Pour the duck sauce over the pork and spread evenly. Cover and cook on high 3-4 hours or low 6-8 hours
Remove the pork and set aside. Put the Instant Pot on saute and bring the sauce to a simmer. Sprinkle in 1 tablespoon of cornstarch and whisk together. Allow the sauce to tighten up
If using a regular slow cooker transfer the sauce to a sauce pan and follow the same steps
Dip the pork back in the sauce to coat. Serve with rice on the side and a sprinkle of fresh sliced scallions
