Frozen Strawberry Daiquiris

We’re definitely Summer weather people.  I love living in New York, but cannot STAND the Winter.  I complain about the cold every single day from November to March

And, yeah, the 90 degree temps we’re having right now can be a bit much, but nothing a swim in the pool and an icy frozen beverage can’t remedy!

So bring it on!  Let’s combat this heat wave with a delicious batch of Frozen Strawberry Daiquiris simply made with some fresh berries, lime juice and white rum

I have a 16 ounce package of fresh strawberries and plan to freeze about 12 ounces or 3 cups.  The frozen berries will take place of ice so the drinks aren’t watered down

We’ll need to core and halve the berries before freezing

I like to use a small paring knife and rotate the berry instead of the knife

 

 

Place the berries on a small sheet pan and pop them in the freezer.  I actually planned ahead and prepped these so they had 24 hours to freeze

We have the remaining cup of fresh strawberries, some simple syrup, the juice of 2 limes and rum

I’m using 1 1/2 ounces of liquor per drink and this makes about 4 drinks, so I’ll measure out 6 ounces of rum

Simple syrup is equal parts water and sugar, boiled until the sugar dissolves and then chilled.  You can make in a large quantity and keep in your fridge so cocktail hour isn’t put on hold

Measure out about a 1/4 cup of simple syrup and keep on hand in case you prefer to add a little more sweetness

Last ingredient is the lime.  I love all things that are tart, just ask my husband.  I suggest that you start out by adding about an ounce of fresh lime and add a little at a time to taste

Start with a handful of the frozen berries.  My blender has a Frozen Drink setting.  If your blender doesn’t have that setting, just pulse a few times

I alternate some fresh berries and frozen, adding in a little of the lime and simple syrup to thin it out

Blend until you have a smooth consistency.  Now you can stop here if you want to make virgin daiquiris or add in the rum.  That’s my plan

Ingredients

16 ounces fresh strawberries (separate 1 cup)

6 ounces rum, to taste

2 ounces fresh lime juice, to taste

1/4 cup simple syrup, to taste

Directions

Core and halve the berries; place 3 cups of the berries on a small sheet pan and place in freezer for 12-24 hours, reserve the remaining cup for blending

Add a handful of the frozen berries to a blender, pulse a few times; alternate some fresh berries and frozen, adding in a little of the lime and simple syrup to thin it out

Blend until you have a smooth consistency.  Now you can stop here if you want to make virgin daiquiris or add in the rum

Blend to incorporate the rum and serve immediately, garnish with fresh strawberries if desired
