Malibu Rum Cooler

Refreshingly sweet & tart raspberry lemonade cocktail with a hint of coconut and fruity sherbet

This cocktail makes me think of being on vacation and relaxing at the beach

I miss sand AND the beach AND vacation right now, so the next best thing is to recreate the relaxing moments during my “stay-cation”

I can’t bring the beach to my backyard, but I can mix up a tasty cocktail!

Assemble raspberry lemonade, Malibu rum, dark rum and rainbow sherbet.  The sherbet is a fun addition and makes this drink creamy and super cool!

What is Malibu rum?

Malibu is a coconut flavored liqueur, made with Caribbean rum.  It’s smooth and refreshing and is referred to as “sunshine in a bottle”

Measure 4 ounces of the lemonade, 2 ounces of Malibu rum, 1 ounce of the dark rum and mix to combine

Pour over ice and garnish with 2 small scoops of sherbet, fresh raspberries and fresh mint

Note: I like to scoop the sherbet ahead of time onto a tray and keep in the freezer until serving.  Use a cookie scoop to get sherbet balls that are small enough to garnish the drink with

Ingredients

4 ounces raspberry lemonade

2 ounces malibu rum

1 ounces dark rum

Raspberry, lemon or rainbow sherbet

Garnish with fresh raspberries & mint

Directions
