Basic Pie Crust
I love pie
And when I say I love pie I mean I love peach pie, apple, strawberry rhubarb, cherry, sweet potato,pecan, etc etc etc
Those are sweet delicious dessert pies, there are also savory pies
I love pies
And when I say savory pies I mean Beef pot pies, Chicken pot pies, seafood pies, etc etc etc
I guess I just like pies!
What always got me is the crust, I mean it seems simple enough, go to the store and buy a ready made crust
Done
Good? Yep….but as good as home made?
Nope
What saved me in this regard was the food processor
This made pie dough pretty much a no brainer for me
So here we go
Basic pie dough is about 2 1/2 cups of flour into your food processor
1 teaspoon of salt
Pulse until combined
Take two sticks of cold butter cut length wise and then across into small chunks
Add to the processor
Pulse until it resembles a course meal
Have 1/2 cup of ice water ready, though you may not need all of it
Pour small amounts of water into your mixer as you pulse the dough until it seizes up and forms a tight mixture
That looks like pie dough!
Make sure your processor is unplugged, remove the blade and set aside
Pull your dough out and roll between your hands until you form and even ball
Come on now?

Cut your pie dough ball as evenly as you can through the middle
This will give you two crusts
Flatten into disks
Seal in plastic wrap and store in the refrigerator until ready for use
Once stored in the refrigerator you will have to allow the dough time to come up to almost room temperature in order to be able to roll it out
You get 2 disks of dough out of this recipe, so you can make a traditional pie, or you can make a tart with one disk and save the second for another use
This is a basic dough and can be altered for a lot of different recipes which we will post to our blog!
