Egg in a Frame
A rich delicious fried egg cooked inside of buttery toast
An Egg in a Frame is a great way to make a breakfast your kids will not only love, but it will make them smile
The general idea is to cut a hole in a slice of bread and fry an egg in the hole
There happens to be a lot of names for this little gem like toad in a hole, bird in a nest, egg in a hole, peekaboo toast, egg in a nest and eggs in a basket
No matter what you want to call it, it’s a tasty and fun breakfast
My kids asked me to make this one morning and just moments later I called them in to eat
They couldn’t believe how fast I cooked them breakfast until they saw my presentation

Well… I thought it was funny
Now let’s get back to business
We typically use a biscuit cutter but you can have fun with this and do all kinds of shapes using cookie cutters

For the sake of timing we are just going to demonstrate one helping
We are using 1 slice of potato bread

Place the biscuit cutter in the middle of the bread and push down

Make sure you keep the piece that you cut out as we are going to toast that up as well

Add in the egg and we are all set
Ha ha ha… I just can’t get enough of this
Enough of the joking around let’s get cooking

Melt 1 tablespoon of butter in a pan over medium heat

Once the butter is bubbling add in the bread and cook 1 minute or until it starts to lightly toast

Flip the bread

Carefully crack an egg into the hole

Cook for 1-2 minutes or until the white of the egg starts to set
Flip and cook another minute or 2 depending on your desired doneness of the egg
I tend to gently touch the yolk with a spatula to see how set it feels

Sprinkle with some salt and pepper, serve immediately and dig in!

Ingredients
1 slice of potato bread

1 tablespoon of butter
1 pinch each of kosher salt and ground black pepper
Directions
Using a biscuit cutter punch the center out of the bread. Melt 1 tablespoon of butter in a pan over medium heat
Place the bread in the pan and cook for 1 minute or until the bread starts to lightly brown and toast. Flip the bread
Carefully crack an egg into the hole. Cook for 1-2 minutes or until the white of the egg starts to set. Flip and cook another minute or 2 depending on your desired doneness of the egg. Gently touch the yolk with a spatula to see how set it feels
Remove to a plate and serve with the toasted centers. Sprinkle with salt and pepper, serve immediately and dig in

Cheddar Chive Pancakes
So here we are again trying to figure out what to make for dinner
Every idea we throw out there to our kids is greeted with bored eye rolls
I had recently received a Blackstone outdoor griddle for Father’s day and was thinking that maybe it was a good night for breakfast for dinner
Our kids typically are on board for that
Here’s the catch though… my wife is not a big breakfast fan
The fact that she really doesn’t eat breakfast at breakfast time certainly meant she wasn’t going to buy into this for dinner
And then I had an epiphany…
I would take our already fail-proof buttermilk pancake recipe and bring it up a whole other savory level with cheddar cheese and chives!
Folks, I think we have a winner!!!
Let’s start with our buttermilk pancakes
If you don’t happen to have buttermilk you can simply make some by adding lemon juice to milk
So in this case I’m adding 2 tablespoons of lemon juice to 2 cups of milk
Let the buttermilk sit for 10 minutes or so

Next, let’s work on our dry ingredients
We will need 3 cups of all purpose flour, 3 tablespoons of sugar, 2 teaspoons of baking powder, 1 teaspoon of baking soda and 1/2 teaspoon of salt

Add all of the dry ingredients in with the flour and whisk to combine

I then dumped this into my Ninja food processor
You can use a blender or just mix away in a large bowl

Next we will need 2 large eggs

Give the eggs a whisk

Add the buttermilk into the eggs

Whisk to combine

Add the wet ingredients to the dry ingredients

Give it a blend
After around 30-40 seconds or so I turn it off and use a rubber spatula to make sure the dry ingredients are being incorporate with the wet

Blend some more until you have a nice batter
Now this is the really important
You need to let the batter rest at least 30 minutes or so in the refrigerator
This is key to lighter fluffier pancakes so plan ahead

Once the batter has rested we can incorporate the cheddar and chives
You can also use scallions for this but we had an abundance of chives growing and figured we should use them
No really… we seriously have a ton!

So we used 3/4 cup of extra sharp cheddar cheese that we shredded and 1 very large bunch of chives

We gave the chives a very fine chop

Add in the cheese and chives

Gently fold the cheese and chives into the batter

Time to start cooking
We are going to use our flat top griddle
You can use a frying pan or stove top griddle
I’m heating a layer of butter on the griddle because pancakes just taste better with a little butter

I like to use 1/4 cup measure to pour out the batter to help keep them all roughly the same size
Let them cook 2-4 minutes
You want some air holes to appear on the top
You can take a peak at them with your spatula to see if they are becoming golden brown

Let’s give them a flip
When you let the batter rest, you will notice the pancakes will actually puff up and rise when you flip them
Looking good!

Let them cook another 2-3 minutes
Remove and set aside
These are some fluffy and golden looking pancakes!

We served these with a side of eggs, bacon and our favorite local syrup!

Ingredients
2 cups of milk
2 tablespoons of lemon juice
3 cups of flour
3 tablespoons of sugar
2 teaspoons of baking powder
1 teaspoons of baking soda
1/2 teaspoon of salt

3/4 cups of extra sharp cheddar
1 large bunch of chives
2 tablespoons of butter
Directions
Combine 2 cups of whole milk with 2 tablespoons of lemon juice and set aside for 10 minutes to make buttermilk
In a large bowl, whisk together 3 cups of flour, 3 tablespoons of sugar, 2 teaspoons of baking powder, 1 teaspoon of baking soda and 1/2 teaspoon of salt. Pour the dry ingredients into a blender or food processor
In a bowl whisk together 2 large eggs and the 2 cups of buttermilk until combined. Pour the wet ingredients into the blender with the dry ingredients. Blend for around 30-40 seconds then use a rubber spatula to ensure the dry ingredients are being incorporated properly with the wet
Refrigerate the batter and allow it to rest for at least 30 minutes
After the batter has rested, shred 3/4 cup of extra sharp cheddar. Finely chop 1 large bunch of chives and gently fold both into the pancake batter
Heat a pan or griddle and lightly coat with butter. Using a 1/4 cup measure, start pouring the pancake batter onto the griddle. Let them cook 2-4 minutes. You want some air holes to appear on the top. You can take a peak at them to see if they are becoming golden brown
Flip them and cook another 2-3 minutes. Remove and set aside. We served these with a side of eggs, bacon and our favorite local syrup

Tater Tot Egg Bake
Now this recipe is a great one for breakfast or brunch but we are making it for dinner
This is a great way to combine the breakfast for dinner idea with the ease of a one dish casserole
Best part is once you have the basic idea from this recipe you can tweak it anyway you like to suit your family’s tastes
Let’s start off with some tater tots
I poured enough into a standard Pyrex baking dish to get a feel for how much I needed
This came out to four cups of tots

Preheat your oven to 425 F and lay the tots on a sheet pan and spread them out so they cook quicker
Cook 12-15 minutes
Then flip and cook another 10 or until they are golden brown and crispy
Remove from the oven and set aside

While the tots are cooking I’m going to place an 8 ounce ham steak in a hot pan over medium high heat and cook for 3-4 minutes

Flip and cook another 2-3 minutes then remove from the heat and set aside

Next we will need 12 eggs, 1/2 cup of heavy cream (or milk), 8 ounces of cheddar cheese, 3 scallions, 3 ounces of sundried tomatoes, 1 teaspoon each of kosher salt, ground black pepper, garlic powder and onion powder
The sundried tomatoes are optional
I like them for their taste and the color they add but if your kids aren’t a fan go ahead and leave them out

In a large bowl add in the eggs, cream, salt, pepper, garlic powder and onion powder
Whisk everyone together

Chop the scallions and tomatoes

Add them to the bowl

Slice the ham steak then cut into cubes
Add this to the bowl as well

Grate the block of cheddar cheese

Add the cheese to the bowl

Fold to combine

Next chop 2 tablespoons of fresh parsley and fold this into the mixture as well

Preheat the oven to 350 F
Spray the baking dish with cooking oil
Add in the tater tots in a single layer and press down gently with the palm of your hands to form a crust

Pour in the egg mixture and spread it around evenly
Place it in the preheated oven for 30-35 minutes

Remove when the eggs have set and a knife comes out clean when inserted
Place on a cooling rack and allow to rest for 10-12 minutes before serving

Whether for breakfast, lunch, brunch or dinner your family is sure to love this dish!

Panettone French Toast
Panettone is a slightly sweet Italian cake that you see around the holidays, typically containing raisins and candied orange peels
It’s one of our favorite cakes to eat as is, or… made into this delightful french toast
But first, there is a funny story behind how we first tried this treat
My wife and I had never had it before. We went out on a date and were sitting at a bar eating sushi
The two Japanese sushi chefs were eating Panettone and asked if we would like some
We said no at first. They insisted we try it because it was so wonderful, so of course we did
Go figure… it took two Japanese men to get two Italians to try this delicious and traditional Italian cake!
Talk about two cultures working together!
Now this cake is fantastic on it’s own, but we decided to take it one step further and make french toast out of it

What exactly is panettone?
The word panettone is derived from the Italian word “panetto” which means a small loaf cake
Panettone is a somewhere between a bread and a cake in taste. It has a slight sweetness and is associated with Christmas in Italy. The dough for panettone is rich and contains a lot of butter and eggs. The addition of the fat to the dough gives it a very fine, tender texture

Cut 2 thick slices out of the Panettone

Next we will need 4 eggs, 1/4 cup of milk, zest from 1 orange, 1 tablespoon of vanilla and some fresh grated nutmeg

Crack the eggs into a dish
Add in the rest of the ingredients and whisk together

Melt 2 tablespoons of butter in a non stick pan over medium heat

Place your Panettone slices into the egg wash and let sit for 30-40 seconds
Panettone is a soft cake to start with so over soaking it could cause it to break down
Flip and soak for another 30 seconds

Using a slotted spatula, carefully remove the Panettone from the egg wash and place into the heated pan
Cook for 2-3 minutes per side then remove to a rack



Allow to cool slightly
Sprinkle with a little powdered sugar

We served this with bacon and some syrup on the side!

Allow to cool slightly. Sprinkle with a little powdered sugar
