Roasted Parmesan Salmon & Broccoli
If you’re like me, you love to cook but dislike the cleanup afterward
Especially scrubbing pots and pans!
Enter simple-dinner-on-a-foil-lined-pan!
Yeah, that works for me
Let’s start by preheating the oven to 400 degrees F. This dinner cooks quickly once the prep work is done
Trim 2 large broccoli crowns into evenly sized florets
Line a sheet pan with foil and arrange the broccoli in a single layer
Drizzle with olive oil and a sprinkle of kosher salt, black pepper, garlic powder and onion powder
Roast in the preheated oven for 10 minutes, until the broccoli starts to lightly brown
While the broccoli roasts, let’s mix up the delicious lemony, cheesy breadcrumb topping
Measure out 1/2 cup each of Parmesan cheese and breadcrumbs, the juice of a half of lemon, 2 tablespoons of chopped fresh parsley and three diced garlic cloves
Mix all of the ingredients and drizzle in 2-3 tablespoons of olive oil just until moistened
Remove the pan from the oven and move the broccoli to the edges of the pan in anticipation of the fresh salmon coming on down…
Spoon the breadcrumb mixture over each of the fillets. Be generous… the crowd will love you for it!
Once the fillets are all topped in a delicious blanket of breadcrumb, Parmesan & lemon, top with some fresh lemon slices
Bake 12-14 minutes until a knife can easily pierce through the salmon
I like to broil for a quick minute to brown up the breadcrumbs and then you’re ready to enjoy a deliciously easy one-pan dinner!
Yum. Divide the broccoli up between 4 plates and top with a salmon fillet and a wedge of lemon

4 salmon fillets

Drizzle of olive oil for broccoli and 2-3 tablespoons for topping
Kosher salt
Black pepper
Garlic powder
Onion powder

1/2 cup breadcrumbs
Juice of a half of lemon
2 tablespoons of chopped fresh parsley
3 diced garlic cloves
