Juicy roasted cornish game hens cooked atop a layer of potatoes and finished with crisp, fresh green beans for a complete dinner. One pan cooking at it’s finest!
Everyone loves things that are personal
Your initials printed on a notepad, your name on a keychain, a pizza that’s personally yours and how about your own personal little bird. A Cornish game hen to be exact. You don’t have to share a leg or wing with anyone because they’re both yours!
Game hens usually come packaged and vary in weight, but are just around 2 pounds a piece
Remove the hens from the packaging, pat dry with paper towels and pull out any innards that may be included
Measure out one tablespoon each of basil & oregano and one teaspoon each of garlic powder, onion powder, black pepper and kosher salt and mix together in a small bowl. We’ll also need 2 pounds of potatoes, 4 garlic cloves and olive oil
Slice the potatoes into thick rounds and place in a large ovenproof pan that has been drizzled with olive oil
Sprinkle the potatoes with some of the spice blend
Add a garlic clove and healthy pinch of the spice mixture into the cavity of each hen. Drizzle the birds with olive oil and sprinkle the remaining spices on top
Arrange the hens over the bed of potatoes and put into a 375 degree oven for 25 minutes
At the 25 minute mark, pour in one cup of white wine such as a chardonnay and roast for about another 45 minutes or until the thickest part of the thigh registers 165 degrees and the juices run clear
Remove the hens from the pan onto a platter and tent with foil
Increase the oven temperature to 400 degrees. Rinse and trim the ends off a pound of fresh green beans. Add to the pan and mix in with the potatoes with a sprinkle of kosher salt and black pepper
Roast for 10-12 minutes tossing once or twice until the green beans are cooked but still crisp and the potatoes are nicely browned
Re-season the potatoes and green beans if necessary and add the hens and juices back to the pan
