This is a great peanut sauce that goes well with many Asian dishes, especially Beef or Chicken Satay and even Spring Rolls

The best part?
It’s fairly easy to make
You will need one 13.5 ounce can of unsweetened coconut milk, 4 tablespoons of sugar, 2 teaspoon of red curry paste, 3/4 cup of dry roasted peanuts, 3 teaspoons of fish sauce and 2 teaspoons of sesame oil
Place your peanuts in a food chopper
Process until the peanuts are small bits
Be careful not to over process however, as the peanuts will form a paste (basically the start of peanut butter)
Place all ingredients into a small sauce pan
Whisk to combine
Simmer over low heat for 15 minutes, stirring constantly
Remove from heat and let stand 10 minutes
Garnish with green onion!

Ingredients

3/4 cup of roasted peanuts
3 teaspoons of fish sauce
2 teaspoons of sesame oil
Green onion (optional)
Directions
Place peanuts in a food chopper and process until they are in small bits
In a small sauce pan, over low heat, whisk together one 13.5 ounce can of unsweetened coconut milk, 4 tablespoons of sugar, 2 teaspoon of red curry paste, 3/4 cup of chopped roasted peanuts, 3 teaspoons of fish sauce and 2 teaspoons of sesame oil
Bring to a simmer and cook 15 minutes stirring constantly
Remove from heat and set aside for 10 minutes
Garnish with a sprinkle of green onion (optional)
