Dressing shouldn’t take away from the benefits of a healthy salad!
This flavorful dressing gets it’s creaminess from avocado and greek yogurt and freshness from the lime juice and herbs without adding unnecessary fat and calories
Let’s assemble the ingredients
One avocado, one cup of greek yogurt, 1/4 cup olive oil, 2 tablespoons of scallions, 1/4 cup of fresh cilantro, juice of one lime and a pinch of kosher salt & black pepper
Feel free to use fresh basil or parsley in place of the cilantro. Or in addition to!
Here’s an easy way to cut an avocado
Put all ingredients into a blender or small mixer and pulse until smooth
Taste and re-season with kosher salt and black pepper if necessary
Refrigerate in a sealed container for up to a week
This vibrant and fresh dressing goes well tossed in a salad or as a dip for fresh veggies

Ingredients
1 avocado
1 cup of greek yogurt
1/4 cup olive oil
2 tablespoons of scallions
1/4 cup of fresh cilantro (or any fresh, green leafy herbs)
juice of one lime
pinch of kosher salt & black pepper
Directions
Remove the skin and pit from the avocado and cut into chunks; juice one fresh lime
Blend 1 cup of greek yogurt, 1/4 cup olive oil, 2 tablespoons chopped scallions, 1/4 cup fresh cilantro, lime juice & a pinch of kosher salt and black pepper
Re-season if necessary; store refrigerated for up to a week
