Hey everyone! It’s Marin here! You know, the Simply Sunday’s resident baker!
These Rolo Cookies are one of our favorites… a soft chocolate cookie filled with gooey caramel… YUM! What’s not to love!
And they only have 4 ingredients which makes them a super easy cookie recipe for kids to bake
You’ll need one box of chocolate cake, 2 eggs, 1/3 cup of oil and 24 Rolo caramel chocolates
You’ll also need powdered sugar to roll the cookies in before baking
Unwrap the Rolos and set aside. This somewhat arduous job is best done by the little baker in your house. You can pay them in leftover rolo chocolates!
Add the cake mix, eggs and oil in a bowl and stir to combine
Scoop out enough of the dough to cover each Rolo. Form into a ball with the Rolo in the center
Roll each ball in powdered sugar and place on the sheet pan lined with a silpat mat or parchment sprayed with cooking spray
Don’t crowd them, they’ll spread a little bit
Bake at 350 degrees F for 7-8 minutes
Remove from oven and let cool on a wire rack
Serve and enjoy!
