This super moist cake-like banana bread is a deliciously healthy version using less butter, oil and sugar than most recipes. Nothing is better than a low fat, guilt-free delicious treat!
We’re all finding ourselves at home these days looking for ways to stay occupied. People are spending more time in the kitchen than ever before
If you look at social media, it seems like everyone is baking some kind of bread! I know we are. Two of our favorites are Rosemary~Shallot Focaccia and Parker House Rolls
So let’s get baking!
You’ll need a cup and a half of ripe bananas, about 3. You’ll also need 2 large egg whites, 1/4 cup of plain low fat yogurt (or low fat sour cream) and 1/4 cup of low fat milk
Simply Sundays tip: If you have bananas sitting on your counter that are on the edge of being over ripe, peel them and freeze them in a freezer bag. Just let sit out for about 20 minutes before using them in a recipe
Next, we need 1 cup of sugar and 1/4 cup of softened butter. Place in the bowl of a stand mixer and mix on medium low until well combined
Add the bananas, milk, egg whites and yogurt to the butter-sugar mixture. Beat on medium speed until well blended
Next we’ll need 2 cups of all purpose flour and one teaspoon of baking soda
Add the flour and baking soda to the banana mixture and beat until just blended. Do not over beat or the bread will be tough
Spoon batter into a 9×5 metal loaf pan sprayed with cooking spray
Bake at 350 degrees F for 50 – 60 minutes or until a cake tester comes out clean
Cool for 10 minutes
Remove this lovely little loaf from the pan and let cool completely. Oh the smell!
Slice up and share with your family who are undoubtedly lurking in the kitchen just waiting for a piece!
