Pineapple Caipirinhas
Caipririnhas (pronounced kye-pur-een-yah) are a popular refreshing cocktail in Brazil
This version isn’t 100% Brazilian, but it will most definitely get you in the spirit!
Cachaca liquor isn’t readily available in any liquor stores near us, so we substituted with light rum. It’s OK… our friends in Brazil won’t judge us
For 2 cocktails, I’m using 4 ounces of light rum, 2 tablespoons of freshly diced pineapple, 2 tablespoons of superfine sugar, 1/2 lime and a bunch of fresh mint

Divide superfine sugar, pineapple and mint between 2 glasses
Muddle (which just means to mash) until the ingredients are combined well
I like my drinks icy cold, so I’ve added the rum and lime juice to a shaker filled with crushed ice. Shake it baby!!
Pour over the muddled mint-pineapple mixture and give a quick stir to combine
Fill the rest of the glass with crushed ice and serve with a garnish fresh pineapple and a mint sprig

Cheers!

Sparkling Peach Sangria
It’s like biting into a big, fat, juicy sweet peach. I can’t think of a better description for this cocktail. Ok, wait, maybe it’s like biting into a deliciously refreshing big, fat, juicy sweet peach?
All I know is Sparkling Peach Sangria demands the best peaches you can find. The rest falls into place
No surprise that I’ve been at the farm market and that’s where I picked up these beauties

I chose 4 peaches… both yellow and white just for a contrast

Slice them up and add them to a pitcher

Pour in a bottle of your favorite chilled white wine. I’m using a chardonnay

Toss in a handful of fresh blackberries or raspberries

Add in a cup of peach schnapps & stir

Refrigerate for at least an hour. I find it’s even better to combine the ingredients up to this point early in the day before your guests arrive. That way, the sangria is icy cold and has had the chance to meld flavors for hours. Makes me thirsty just talking about it
Add some fruit to each glass and top two thirds full with the peach sangria

But wait, there’s more! Let’s add in some bubbly!
Top each glass of sangria with your favorite chilled prosecco or champagne

And enjoy with friends!

Cheers!

Cucumber ~ Lime Martini
The name Cucumber~Lime Martini sounds refreshing, doesn’t it??
What makes this martini a step above the rest is that we don’t use cucumber flavored vodka or just muddled cucumbers…
We actually infuse the simple syrup with shredded cucumbers! Oh, the flavor!
It’s pretty simple too. SO, let’s start with the simple syrup (pun intended)
Shred about 1/2 of an English cucumber (about 2 cups). I prefer to use the English cukes because there are way less seeds

To make the simple syrup, boil 2 cups of water and 2 cups of white sugar and stir until dissolved

Remove from the heat and immediately place the shredded cucumber in the simple syrup
Let cool completely, drain over a bowl and squeeze out the excess liquid from the cukes

At this point, you can chill until you’re ready to make some delicious cocktails!
Since we’re having Happy-Hour-For-Two on the front porch tonight, the next set of measurements are for 2 martinis
Double, triple or quadruple depending upon the size crowd you have. Or heck, make up a pitcher!
For each drink, measure out 2 ounces of your favorite vodka, one ounce of cucumber simple syrup and one ounce of fresh lime into a cocktail shaker filled with crushed ice
SHAKE IT!!!

Pour the deliciously refreshing ingredients into chilled martini glasses and enjoy!

I would be remiss if I didn’t add in this photo of our hummingbird friend who joined us on the front porch. He must have been annoyed that we didn’t share 😊

Cheers!

Pineapple Madras
Nothing feels more like Summer than an icy cold, refreshing beverage
Well, other than the hot sun and 90 degree temperatures
I came up with this version of a Madras while on vacation because it was what we had in the fridge
And it absolutely works. Chilled to perfection and oh ~ so ~ refreshing
It’s as easy as 1-2-3!
Or maybe I should say 3, 2, 1 because the measurements are pretty simple:
3 ounces of OJ, 2 ounces of pineapple and 1 ounce of cranberry
The amount of vodka you choose to put in is of personal taste… we like 2 ounces per cocktail but you can add or subtract based on your preference

Measure out all of your liquids, add to a shaker with some crushed ice and shake it baby!

To make two Pineapple Madras (come on, sharing is caring), you’ll need to double the amount of orange, pineapple and cranberry juices & your favorite vodka
I have a love of anything in a mason jar, so naturally that’s what I’m serving these in
I poured this tasty beverage into a wide mouth jar filled with ice and garnished with an orange wedge
Ahh…. enjoy the sweet taste of Summer!

Pin me!

Cheers!
