There’s nothing like creamy Brie cheese topped with sweet apricot preserves baked in a light and flaky puff pastry
This is a simple appetizer that is elegant enough to start off your Holiday gathering and flavorful enough to stand up to a Superbowl Game day snack table
You’ll need a wheel of Brie cheese, a sheet of puff pastry and good quality apricot preserves
Defrost the sheet of puff pastry according to the package directions and roll out
Place pastry in a pie plate, add the Brie wheel in the center and top with about a cup of apricot preserves
Fold each corner into the middle and pinch the seams so the puff pastry is sealed
Mold into a circular shape and pinch the middle points into a cone shape
At this point, you can cover in wax paper and wrap the entire pie dish in plastic wrap and chill overnight if you are not baking immediately
When you are ready to bake, brush the top of the pastry with a beaten egg
Bake in a 400 degree oven for 20 – 25 minutes or until the pastry is a golden brown color
Let the Brie puff sit 5 minutes before cutting into it
Serve with your favorite crackers, toasted baguette or apple slices
