The fun part of any New Year’s Eve gathering is the tasty bites of different appetizers
We’ve put together a few of our favorites to share so you can ring in the New Year deliciously!

Pretzels are so popular they have their own day… National Pretzel Day!
SO many varieties…
Thin & crispy, fat and crunchy, big and soft… honey wheat, sourdough, pumpernickel… the choices go on and on
Today, we’re going to make soft pretzel bites and a smooooth cheese dipping sauce. These are great for a party or an anytime snack
Let’s start with 1 1/2 cups of water, 2 tablespoons of brown sugar, 1 package of dry yeast, 6 tablespoons of melted butter and 2 1/2 teaspoons of kosher salt

Put all ingredients in the bowl of a mixer with the hook attachment
Mix until combined well, and let sit for about 5 minutes
You’ll need about 4 to 4 1/2 cups of flour depending on stickiness. Start with 4 cups and then add as needed
With the mixer on low, slowly add in flour one cup at a time. Increase to medium about another 4-5 minutes until the dough is smooth and pulls away from the side of the bowl
If the dough still seems a little tacky, add in a sprinkle more of flour and mix until combined
Hey, nice dough

Oil a large mixing bowl, add the ball of dough, cover with plastic wrap and let rest in a warm place for about an hour
Put 3 quarts of cold water into a large saucepan and bring to a boil. Slowly add in 1/2 cup of baking soda and return to a boil

Remove dough from bowl, flatten into a disc shape and cut into 8 wedges
Roll each wedge into a 24 inch rope and cut into about 1″ pieces
Toss your dough pieces into the boiling water for about 35 seconds and remove to a sheet pan sprayed with cooking oil
Beat one egg mixed with a tablespoon of water and brush over the tops of each boiled dough piece
At this point, you can simply sprinkle with kosher salt, or be as creative as you like and sprinkle on poppy seeds, sesame seeds, dried shallots, dried onions, etc. Whatever flavors you like!
Bake for 14 – 16 minutes on 425 degrees until golden brown. Cool slightly and serve with cheese sauce or any dipping sauce of your choice

My Mother-in-Law, Doris, has been making this Honey-Scallion Cheese Log to bring to parties for years
It was almost expected that she would show up with this delicious (and oh-so-highly-requested) appetizer
It’s one of those recipes that you try and can’t imagine how 4 ingredients can taste this good!
We thought it fitting that she should make this Honey-Scallion Cheese log to share with you all!
The most important ingredient is the wheat germ
Not just ANY wheat germ, it has to be Honey Crunch. Believe me, Doris wouldn’t have made this if I didn’t buy the correct wheat germ
And she’s right, of course, it adds a delicious sweetness and crunch to the cheese log
Measure out about a cup of honey crunch wheat germ, 1/2 cup of honey, 4 scallions and 2 packages of cream cheese
Let the cream cheese sit out for an hour or so until it reaches room temperature. Cut the green part of each scallion into thin slices

In a large mixing bowl, add in the 1/2 cup of honey and the scallions
Mix until all of the ingredients are incorporated and form into a ball. Chill for about 30 minutes to make it easier to form into a log
Now prep a sheet pan by lining with plastic wrap and add about 1/2 of the wheat germ
(did I mention it should be Honey Crunch?)

Plop your chilled cheese mixture onto the pan and roughly form into the shape of a log
It doesn’t matter if it’s misshapen at this point, you’ll fix it up in a minute

Top with more of the wheat germ and pull the plastic wrap up and over the log
Make sure the log is completely covered (every inch of it!) with the wheat germ, and now you can shape into a perfect log shape
Doris likes it to flatten it out a little so there’s more surface area

Nice! Now wrap up in the plastic and chill for about an hour so the flavors meld and the log firms up a bit

Macaroni Salad makes me think of parties and BBQ’s and warm weather…
It hasn’t quite warmed up here in the Northeast, but our daughter Marin has been asking for her favorite Macaroni Salad for the past few weeks, so here it is!
Start with a pound of your favorite elbow macaroni cooked according to package instructions. Drain and set aside
While the macaroni cools, let’s get the dressing together
To a mixing bowl, add one cup of mayonnaise, 1/2 cup of sour cream, 2 tablespoons of ketchup and 2 tablespoons of red wine vinegar and stir well
For spices, I use one teaspoon each of kosher salt, black pepper, garlic powder, onion powder and white sugar
Stir well to combine and pour over your cooled macaroni

Set aside to let the flavors start to meld while you cut some veggies
So let’s chop!
Dice 2 cups of carrots & red peppers, one cup of celery and one large shallot (or red onion) into small, uniform pieces
Yes, I know… the celery wasn’t there and now it is. Creative license
Put everybody in the bowl, stir well to combine and let the melding begin
This salad needs at least an hour in the fridge to chill and for the flavors to blend together
When it’s serving time, you’ll need to add in another dollop of mayo because the macaroni sucks it up (technical cooking term). Re-season with kosher salt and black pepper if necessary
Yum!

1 teaspoon white sugar
2 cups carrots
2 cups red peppers
