Summer Watermelon Salad

Nothing says Summer like watermelon!

This refreshing fruit is not only delicious served as a dessert or sweet snack, but also as a side dish

 This sweet, chilled salad makes a perfect accompaniment to anything grilled

 Or just a great, light lunch

Just a few easy steps and you’ll have a perfect side that looks elegant and tastes amazing!

In this case, I chose to make individual salad plates, but you could just as easily make a beautiful presentation on a platter if hosting a get together

Place a bed of fresh arugula on your serving plate

Then add seedless watermelon that you’ve cut into evenly sized cubes

This makes the presentation nice and also makes the salad easy to eat

 

Drizzle lightly with good quality extra virgin olive oil, sprinkle with a pinch of kosher salt, top with a chiffonade of fresh basil

Chiffonade sounds fancy, but it really just means thinly sliced

Add about a teaspoon of plain crumbled feta to each plate and drizzle with reduced balsamic

We like this reduced Balsamic

 There you have it!

 The sweetness from the watermelon paired with the saltiness of the feta and the peppery bite of the arugula…

A match made, well, in the kitchen!

Ingredients

2 cups arugula

2 cups of fresh, seedless watermelon

Drizzle of extra virgin olive oil

Kosher salt

4 teaspoons plain, crumbled feta

Reduced balsamic for serving

Directions

Cut 2 cups of watermelon into uniformly sized cubes

Divide arugula and watermelon on 4 plates, drizzle with olive oil, sprinkle with kosher salt, top with a teaspoon each of crumbled feta and drizzle with reduced balsamic
