Quinoa

Quinoa.  Keen-wah.  Phonetically speaking

 Such a good basis for so many dishes

Most often, recipes call for ‘cooked’ quinoa, so let’s start here

You’ll need 2 cups of salted water or veggie stock, one cup of quinoa and a tablespoon of kosher salt

 Rinse the quinoa under cold water in a fine sieve

Bring the water & kosher salt (or veggie stock  to a boil) and add the rinsed quinoa

Return to a boil, then turn the heat all the way down and let the grain absorb the water slowly… this should take about 15 minutes

Fluff up with a fork and sprinkle with additional kosher salt if desired
