I learned this neat trick a couple of summers ago at the farm stand and I still use it to this day.
When you buy a bunch of scallions, place in a mason jar with a few inches of cold water
Your scallions will continue to grow even when you cut the green tops off to use in recipes
Change out for fresh water every day or two and the “counter scallions” should last up to 2 weeks.
They get a little leggy and kind of crazy looking, but how cool is it to have scallions growing this easy right in your kitchen!
