Garden Fresh Salsa

Quick and easy Garden Fresh Salsa simply made with ripe tomatoes, jalapeno pepper for some heat, citrusy cilantro, red onion & fresh lime juice for added zing

I’m not even kidding when I say I make this fresh salsa all of the time!!

It’s easier than you’d imagine and once you taste this fresh salsa made from only 5 ingredients, you won’t ever want to open a jar of store-bought again

  To start, I’m using 2 1/2 pounds fresh Roma tomatoes with the core removed, cut into quarters, but you can use whatever tomatoes look the best

Blend up about half of the tomatoes

We like the base of the salsa to be thin, similar to what you find at Mexican restaurants, but with some chunks for contrast

 Add a quarter cup of the red onion and a whole jalapeno to the blender and pulse

We also grow jalapenos and this year they are HOT, so I’m only using one

This will be a matter of your personal preference… if you like your salsa with less heat, remove the seeds and ribs

May I suggest wearing a rubber glove??

It never fails that the jalapeno-holding-hand is the one you’ll rub your eye with later

Squeeze in the fresh lime juice, the cilantro and kosher salt and black pepper

Give a quick whirl then top with the remaining tomatoes and pulse just a few times

Ingredients

2 1/2 pounds of tomatoes

1 jalapeno with seeds or seeded for less heat

1/2 lime, juiced

1/4 cup of red onion

Bunch of cilantro

Kosher salt & black pepper to taste

Directions
