Caprese Salad

It gets to the point in the Summer when we’re inundated with tomatoes

Which, in my opinion, is a good thing

But what to do with them?  I can think of endless uses for fresh, Summer tomatoes, but this is our all time favorite

I’m pretty sure the translation means “salad in the style of Capri” but I’ll let my Italian friends confirm that for me

What I do know is, Caprese Salad is sweet, chilled, delicious tomatoes layered with creamy fresh mozzarella and sprinkled with thinly sliced basil

And the best part is you can plate this side dish beautifully and look like a pro in under 10 minutes

Slice up about a pound of ripe tomatoes

I’m using the pre-sliced store bought fresh mozzarella so I’m slicing the tomatoes about the same width as the cheese

Arrange on a platter… tomato, mozzarella, tomato, mozzarella, tomato… you get it

Drizzle with extra virgin olive oil, sprinkle with kosher and a pinch of crushed red pepper

Drizzle with good quality reduced balsamic vinegar and a chiffonade of basil

Ingredients

1 pound of ripe tomatoes

1 pound fresh mozzarella

extra virgin olive oil

sprinkle with kosher salt

a pinch of crushed red pepper

good quality reduced balsamic vinegar

Fresh basil

Directions

Slice up the tomatoes and mozzarella (unless you’re using pre-sliced) so that they are both the same width

Arrange on a platter, alternating the tomato and mozzarella

Drizzle with extra virgin olive oil, sprinkle with kosher salt and a pinch of crushed red pepper

Drizzle with good quality reduced balsamic vinegar and a chiffonade of basil
