Flatbread Briezza
The perfect pairing of creamy brie, onions caramelized with a sweet and tart raspberry jam on toasty flat bread sprinkled with fresh rosemary!
This is another one of our favorites on homemade pizza night
We like to call it Briezza!
You have the silky richness of brie, the sweetness of caramelized onions in raspberry jam, fresh herbs and a crispy crust
Need I say more?
To make pizza night even easier we are going to use Naan flatbreads for our crust
To start we will need 1 large onion (red or white) and 1 cup of seedless raspberry jam

Slice the onion thinly
We will also need 2 tablespoons of olive oil and 1 teaspoon each of kosher salt and ground black pepper

Heat the oil in a large pan over medium heat and add in the onions
Sprinkle them with the salt and pepper

Sweat the onions down for a good 10-12 minutes

Once the onions are starting to brown and soften up add in the raspberry jam

Stir to combine
Cook for another 5-6 minutes until the onions are nicely caramelized
Remove from the heat and allow to sit for another 5-6 minutes until the jam thickens up a bit

Preheat your oven to 450 F
Evenly distribute the onion and jam mixture on the Naan

Next we will need Brie and a sprig of fresh rosemary
We used about half of this wheel of brie or around 9 ounces

Slice the brie into thin lengthwise slices
Remove the leaves from the rosemary and discard the stem

Cut the brie into chunks and dice the rosemary

Place the brie chunks over the onions on the flatbread

Sprinkle with the diced rosemary

Place in the oven a couple of inches from the top

Cook for 15-20 minutes or until the crust is toasty and the cheese is bubbly and starting to brown
Allow the pizza to rest a few minutes before serving

Slice the briezzas up and serve!

Ingredients
3 Naan flatbreads
1 large onion (red or white)

9 ounces of brie
1 sprig of fresh rosemary
1 teaspoon each of kosher salt and ground black pepper
2 tablespoons of olive oil
Directions
Heat 2 tablespoon of extra virgin olive oil in a pan over medium heat. Peel and slice the onions, add them to the pan with a teaspoon of kosher salt and ground black pepper, cook down until starting to soften, about 10-12 minutes
Add in 1 cup of raspberry jam, stir to combine and cook down until the onions and jam are caramelized, around another 5-6 minutes; remove from heat and set aside

Prosciutto, Arugula & Balsamic Flat Bread Pizza
Out of all of the flat bread pizzas that we make this one is my all time favorite
You have the salty richness of prosciutto, the sharp bite of the arugula and the sweet and tart reduced balsamic
I mean where exactly can you go wrong?
We like to use Naan as our flat bread of choice
Naan is traditionally cooked in a tandoor oven in India, Persian and Central Asia
It is a fantastic vehicle for so many dishes and it is a total family pizza night short cut
So to start we are using 2 original Naan flat breads, 2 tablespoons of roasted garlic, prosciutto and fresh mozzeralla
Click the following link to roast your own garlic

Place the flat breads on a sheet pan
Place about 1 tablespoon of roasted garlic on each bread
Smear it into a paste and evenly spread it around the bread



Next slice up the fresh mozzeralla

Pull the cheese apart and place on the Naan

Place some prosciutto on a cutting board and cut into strips

Top the flat bread with the prosciutto and place into a 450 F preheated oven
Place in the oven and cook 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious and the prosciutto is crispy

Now this already looks awesome but we are going to bring this to a higher level
We will need reduced balsamic, parmesan cheese and baby arugula

Top the pizza with the arugula

Shave some strips of parmesan cheese

Add the parmesan to the pizza

Then drizzle the reduced balsamic over the pizza as a finishing touch



YUM!!!!

Remove to a cutting board to slice and serve

Ingredients
2 Naan original flat breads
tablespoons of roasted garlic
8 ounces of fresh mozzarella
6-8 ounces of prosciutto
8 ounces of baby arugula
fresh parmesan cheese (shaved into strips)
reduced balsamic drizzle
Directions
Place the flat breads on a sheet pan. Place about a tablespoon of roasted garlic on each bread. Smear it into a paste and evenly spread it around the bread
Slice and pull apart fresh mozzarella cheese and place on the Naan. Place some prosciutto on a cutting board and slice enough to top the flat breads. Place into a 450 F preheated oven and cook for 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious and the proscuitto is crispy
Top the pizza with baby arugula. Shave some strips of fresh parmesan and top the pizza with that as well. Drizzle with reduced balsamic and serve

Mushroom & Smoked Gouda Flatbread Pizza
Here is another one of our families favorite flatbread pizzas
Earthy mushrooms with a smoky cheese made on Naan
Naan is flatbread cooked in a tandoor oven in India, Persian and Central Asia
It is a fantastic vehicle for so many dishes and it is a total family pizza night short cut
Here we are using some whole grain and some original Naan bread

We are going to start with 4 large baby portabella mushrooms

Clean your mushrooms with a dry paper towel and slice them up

Heat 2 tablespoons of extra virgin olive oil over medium heat
Add in the mushrooms

Cook these 6-8 minutes or until they are nice and tender
Remove them from the pan and set aside

Instead of sauce we are going to go for a white pizza here
I still want a lot of flavor so we are going to brush the flat bread with some garlic, parsley and extra virgin olive oil

Add the garlic and parsley into a food processor along with 1/4 cup of oil and blend everyone up

We are using 1 whole wheat and 1 original Naan
Spread the garlic, parsley and oil on the bread
There is something about a smoked cheese like gouda or mozzarella that just works great with the earthy flavor of mushrooms
I just love the combo
We decided to use smoked gouda which we sliced on a box grater
Start covering the Naan with cheese

Now the next one

Now top with mushrooms

Preheat your oven to 450 F
Place in the oven and cook 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious

Sprinkle with a pinch of kosher salt
Let them rest a couple of minutes before slicing

Ingredients
2 Naan flatbreads
4 large baby portabella mushrooms

2 garlic cloves
1/4 cup of fresh parsley
1/4 cup of extra virgin olive oil
1/4 pound of smoked Gouda (judge accordingly to your cheese needs)
kosher salt
Directions
Clean 4 baby portabella mushrooms with a dry paper towel and slice them up. Heat 2 tablespoons of extra virgin olive oil over medium heat. Add in the mushrooms
Cook these 6-8 minutes or until they are nice and tender. Remove them from the pan and set aside
Add 2 garlic cloves, 1/4 cup of fresh into a food processor along with 1/4 cup of oil and blend everyone up. Spread the garlic, parsley and oil on the bread
Slice around 1/4 pound of smoked Gouda and lay the slices on the bread. Top it with the mushrooms
Place in the oven and cook 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious
Sprinkle with a pinch of kosher salt. Let them rest a couple of minutes before slicing

Sausage & Pesto Flatbread Pizza
Even though one of our biggest points of view are scratch made foods we totally understand the busy weeknights
And there are some short cuts that are just totally worth it
So even though we like to make our own pizza dough there are moments were you just have to cut corners
Flatbreads are a great way to make personal pizzas for your family without fussing about the dough
We personally like to use Naan bread which is flatbread cooked in a tandoor oven in India, Persian and Central Asia
It is a fantastic vehicle for so many dishes and it is a total family pizza night short cut
Here we are using some whole grain and some original Naan bread

To start we are going to need 6 hot Italian sausage, 1 onion and 1 cup of pesto
Click on this link to make your own pesto

Heat 2 tablespoons of extra virgin olive oil oven medium heat, remove the sausage from it’s casings and add the meat to the pan

Cook for 5-6 minutes breaking up the sausage as you go into smaller bits until they are all nice and brown

Remove the sausage and set aside
I do the sausage first because I really see nothing wrong with caramelizing the onions in some spicy sausage oil
Chop the onion

Add to the pan and cook 5-6 minutes until nice and tender and lightly browned
Oh, do you see the nice color from the sausage oil?
That equals flavor
Add the sausage back in and combine, then remove and set aside

Preheat your oven to 450 F
We are using two Naan breads here
Start spreading some pesto on the Naan

Looking good already

Top with the sausage and onion mixture

Shred some mozzarella cheese and top the pizzas
Place in the oven and cook 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious

Not sure how many other adjectives I can fire off here but darn these look tasty

Remove to a cutting board and let them rest a couple of minutes before slicing

Preheat your oven to 450 F. Start spreading some pesto on the two of the Naan breads Top with the sausage and onion mixture. Shred some mozzarella cheese and top the pizzas
Place in the oven and cook 20-25 minutes or until the cheese has melted and browned lightly and is bubbly and delicious. Remove to a cutting board and let them rest a couple of minutes before slicing
